Butternut Squash Chicken Soup
With fall here, it turns my head to all the yummy fall foods to enjoy and squash tops that list. My husband made me an amazing no noodles (you can add egg noodles if you want) soup that was just perfect and I wanted to share that with you here.
Ingredients:
Butternut Squash (cubed)
Chicken (can just use a rotisserre that you shred up, otherwise cooked chicken shredded)
Onion
Celery
Chicken Broth (I used 2 containers)
Pepper / Salt
Fresh Parsley
Bring to a boil and then simmer for 1 hour.
(optional, egg noodles. I try not to eat a lot of carbs, so I did not add them to mine to make it more Paleo and Keto friendly)
