Kale and Sausage Creamy Soup (Keto version of "Zuppa Toscana")
This low carb version of a Zuppa Toscana recipe that omits the potatoes. We made a large pot of soup so you can cut this in half if you want to make less. This is a super easy recipe to do and you can literally just wing this soup recipe to make it come out how you like it. This is just how my husband and I enjoy it, but if you want to add less Kale or other ingredient, that's up to you!
Ingredients:
Kale - entire bunch roughly chopped up
Italian Sausage - You can use regular or spicy if you like. (we used 2 rolls)
Onion (1 whole onion chopped)
Chicken Broth (2 boxes of chicken broth)
Pepper / Salt / Red Pepper Flakes/ Parsley
Heavy Cream - 1/2 cup
Garlic - Chopped, I used whole bulb but we love garlic!
Bring chicken broth to a simmer, cook sausage with garlic, onion and seasonings and add into your chicken broth to simmer for 30 minutes adding the heavy cream in as well, lastly add the Kale for 15 minutes and serve.
Optional low carb ingredients to add:
Shrimp (this was amazing with added shrimp)
Cauliflower
You can add a half block of cream cheese if desired for more thickness
sundried tomatoes
(Not doing a low carb diet? You can add potatoes! I try not to eat a lot of carbs, so I did not add them to mine to make it more Paleo and Keto friendly)
